Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 can 20 oz pineapple chunks, drained (reserve juice)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • ¼ cup apple cider vinegar
  • 2 cloves garlic minced
  • ½ teaspoon ground ginger
  • ¼ teaspoon black pepper
  • ½ tablespoon sesame seeds optional
  • ½ tablespoon chopped green onions optional

Instructions
 

  • Place the chicken breasts in the slow cooker.
  • In a small bowl, whisk together the reserved pineapple juice, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and black pepper.
  • Pour the sauce mixture over the chicken in the slow cooker.
  • Add the pineapple chunks on top of the chicken.
  • Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is tender.
  • Once cooked, shred the chicken with a fork and mix it with the sauce.
  • Serve with steamed rice, garnish with sesame seeds and green onions if desired.

Notes

  • Adjust the sweetness by adding more brown sugar if you prefer a sweeter flavor.
  • To thicken the sauce, you can remove the chicken and simmer the sauce for 10-15 minutes.
