Ingredients
  

  • 2 cups rice flour
  • 1 ½ cups sugar
  • 1 ½ cups queso duro blando or any hard cheese
  • 4 eggs
  • 1 cup milk
  • ¼ cup sesame seeds
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine rice flour, sugar, and baking powder.
  • Add the eggs, milk, and vanilla extract, and whisk until smooth.
  • Stir in the crumbled queso duro blando.
  • Pour the batter into a greased baking dish and top with sesame seeds.
  • Bake for 30 minutes or until golden brown and a toothpick comes out clean.
  • Optional: Finish by grilling the quesadilla for a crispy outer layer.
  • Slice and serve warm!

Notes

For a lower-carb alternative, substitute rice flour with almond flour. To make the quesadilla crispier, finish it on a George Foreman Grill or use an oven with a broiler setting.
