Ingredients
  

  • 1 cup pumpkin purée
  • 1 ½ cups rolled oats
  • ½ cup vanilla protein powder
  • cup nut butter almond or peanut
  • ¼ cup maple syrup or honey
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: chocolate chips or nuts

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  • In a large bowl, mix pumpkin, nut butter, syrup, and vanilla until smooth.
  • Add oats, protein powder, pumpkin spice, and salt. Mix thoroughly.
  • Fold in optional chocolate chips or nuts.
  • Press mixture evenly into prepared pan.
  • Bake for 15–18 minutes or until set.
  • Let cool completely before slicing into bars.

Notes

Use certified gluten-free oats if needed.
Store in the fridge for up to a week or freeze for 3 months.
No-bake version: skip baking and refrigerate until firm.
