Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
In a large bowl, mix pumpkin, nut butter, syrup, and vanilla until smooth.
Add oats, protein powder, pumpkin spice, and salt. Mix thoroughly.
Fold in optional chocolate chips or nuts.
Press mixture evenly into prepared pan.
Bake for 15–18 minutes or until set.
Let cool completely before slicing into bars.
