Ingredients
  

  • For the Chicken Pasta:
  • 1 ½ pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil

Creamy Sun-Dried Tomato Sauce

  • 3 tablespoons butter
  • 2 teaspoons garlic minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Fresh basil for garnish

Instructions
 

  • Cook the Penne Pasta
  • Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions. Drain and set aside.
  • Cook the Chicken
  • Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook for 6-8 minutes or until fully cooked. Remove from the skillet and set aside.
  • Make the Creamy Sun-Dried Tomato Sauce
  • In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds. Stir in flour and cook for another minute. Slowly whisk in chicken broth and heavy cream. Add parmesan cheese, sun-dried tomatoes, paprika, and Italian seasoning. Let the sauce simmer for 5 minutes until it thickens.
  • Combine Chicken, Pasta, and Sauce
  • Add the cooked chicken and pasta to the skillet, tossing to coat everything in the creamy sauce.
  • Serve
  • Garnish with fresh basil and extra parmesan cheese. Serve immediately and enjoy!
