Garlic Butter Steak Bites with Parmesan Cream Sauce

Tender steak bites seared in garlic butter and smothered in a creamy parmesan sauce. A rich and savory dish perfect for a comforting dinner or special occasion.
¾cupMonterey Jack cheeseshredded or mozzarella, pepper jack
1teaspoongarlic powder
¾teaspoonsalt
Pepper to taste
2tablespoonssmoked paprika
1tablespooncayenne pepper
1tablespoononion powder
2teaspoonsgarlic powder
1teaspoonground black pepper
1teaspoonsalt
½teaspoondried thyme
½teaspoondried oregano
Instructions
Prep the Ingredients:
Cut the steak into 2-3" pieces, rub with avocado oil, and season with blackened seasoning. Let the steak rest at room temperature for 10-15 minutes.
Peel and quarter potatoes, then soak in cold water for 10 minutes to remove excess starch. Boil until fork-tender.
Cook Steak and Potatoes:
In a hot skillet, add 2-3 tablespoons avocado oil and sear the steak pieces in batches for 2-3 minutes until golden brown. Flip once. After cooking, remove steak and set aside.
Add 3 tablespoons of butter and 1 tablespoon garlic to the skillet, cook until fragrant, then toss steak back in to coat with garlic butter.
Make the Cream Sauce & Serve:
In the same pan, melt 2 tablespoons butter, sauté the remaining garlic until fragrant. Slowly whisk in the heavy cream and bring to a simmer.
Add red pepper flakes, scallions, and parmesan cheese. Whisk until the sauce thickens and adjust salt and pepper.
Mash the potatoes with half and half, butter, cheese, garlic powder, salt, and pepper.
Plate the steak bites over mashed potatoes, spooning the parmesan cream sauce over the top.
Notes
You can substitute the mashed potatoes with mashed cauliflower for a low-carb option.
For a lighter version, replace heavy cream with evaporated milk.
To ensure the steak bites are tender, avoid overcooking and let them rest before serving.
