Ingredients
  

  • Brussels sprouts 1 lb (fresh, bright green, trimmed)
  • Bacon 6 slices (thick-cut for extra crunch)
  • Garlic 2 cloves (minced)
  • Balsamic vinegar 1 tbsp (for added sweetness)
  • Olive oil 2 tbsp (or avocado oil)
  • Salt to taste
  • Pepper to taste
  • Fresh herbs optional, such as thyme or rosemary

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Trim and halve the Brussels sprouts. Remove any loose or damaged leaves.
  • Toss Brussels sprouts in olive oil, salt, and pepper.
  • Lay them out in a single layer on a baking sheet.
  • Roast for 20–25 minutes, flipping halfway through.
  • While the sprouts are roasting, cook bacon until crispy and crumble into bits.
  • For the last 5–10 minutes, add crumbled bacon to the baking sheet.
  • Remove from the oven and drizzle with balsamic vinegar. Toss to combine.
  • Serve warm, garnished with additional fresh herbs if desired.
