Ingredients

  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric or annatto
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper for heat
  • ½ teaspoon salt and freshly ground black pepper
  • Lime juice for a zesty kick
  • Fresh coriander leaves for garnish

Instructions
 

Marinate the Chicken:

  • In a large bowl, combine the chicken, olive oil, sazon seasoning mix (or homemade version), salt, and pepper. Toss until evenly coated. Cover and refrigerate for at least 30 minutes or up to 24 hours.

Cook the Chicken:

  • Grilling: Preheat the grill to medium-high heat (400°F). Grill chicken for 6–8 minutes per side or until the internal temperature reaches 165°F.
  • Baking: Preheat the oven to 375°F. Place the marinated chicken on a lined baking sheet and bake for 25–30 minutes, flipping halfway through.
  • Pan-Searing: Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4–6 minutes per side until golden brown and cooked through.

Finishing Touches:

  • Remove the chicken from the heat and let it rest for 5 minutes. Garnish with freshly chopped coriander leaves and a squeeze of lime juice.
