For the Tortellini and Steak: 12 oz cheese tortellini fresh or refrigerated 1 lb ribeye steak thinly sliced 1 small onion thinly sliced 2 garlic cloves minced 1 tbsp butter 1 tbsp olive oil ½ tsp paprika Salt & pepper to taste For the Provolone Sauce: 1 tbsp butter 1 tbsp all-purpose flour ½ cup beef broth 1 cup heavy cream ½ cup milk 1 ½ cups provolone cheese shredded ¼ cup Parmesan cheese grated Salt & pepper to taste For Garnish: 2 tbsp fresh parsley chopped Extra Parmesan cheese optional
Step 1: Prepare the Steak Thinly slice the ribeye steak against the grain and season with salt, pepper, and paprika.
