Step-by-step instructions
Step 1: Make the cheesecake “dough”
- In a mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar, vanilla extract, and a pinch of salt.
- Beat until fully combined, smooth, and creamy.
Cream cheese, sugar, and vanilla are the base of most cheesecake truffles and bites.
Step 2: Add graham cracker crumbs
- Stir in the graham cracker crumbs until the mixture holds together like a thick dough that you can roll.
- If it feels too soft, you can chill the bowl briefly or add a spoonful more crumbs until it firms up.
Graham crumbs are commonly used to mimic cheesecake crust flavor inside no-bake bites.
Step 3: Roll into balls and chill
- Roll the mixture into 1‑inch balls and place them on a parchment-lined tray.
- Chill the tray in the fridge for about 1 hour, or until the bites are firm enough to dip without falling apart.
Chilling helps the bites keep their shape during dipping, just like other cheesecake truffle recipes.
Step 4: Melt white chocolate and candy melts
- Melt the white chocolate or almond bark in a microwave-safe bowl in short bursts, stirring between each, until smooth.
- Melt the red and green candy melts in separate bowls according to package directions.
- Let the melted coatings cool slightly so they’re warm and fluid, not scorching hot.
Short microwave bursts and stirring help prevent seizing and overheating.
Step 5: Dip and decorate
- Once the cheesecake bites are firm, dip each one into the melted white chocolate, letting excess drip off.
- Place dipped bites back on the parchment-lined tray.
- Immediately top with holiday sprinkles and, if desired, drizzle with red and green candy melts for extra color.
- Repeat with remaining bites.
Coating in chocolate and decorating with sprinkles is a common finishing method for cheesecake truffles and Christmas bites.
Step 6: Chill to set
- Return the tray to the fridge and chill until the chocolate coating is fully set and firm.
- Keep the finished cheesecake bites refrigerated until ready to serve.
Because they contain cream cheese, no-bake cheesecake truffles should always be stored chilled.
