Mexican White Trash Casserole

This casserole is a creamy, cheesy Doritos bake layered with seasoned chicken (or beef), Rotel tomatoes, and plenty of melty cheese. It’s quick comfort food that tastes like loaded nachos turned into an easy weeknight dinner.

Ingredients

  • 1 bag Nacho Cheese Doritos, lightly crushed (about 4 cups)
  • 2 cups cooked shredded chicken or browned ground beef
  • 2 cups shredded cheese (cheddar or Mexican blend, more if you like)
  • 1 can (10–10.75 oz) cream of chicken soup
  • 1 can Rotel diced tomatoes with green chilies, undrained
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 packet taco seasoning (about 1 tablespoon), or more to taste

Optional add‑ins: 1 can black beans and/or 1 can corn, drained, for extra bulk and flavor.

Step‑by‑Step Instructions

1. Prep the oven and dish

  • Heat oven to 350°F (175°C).
  • Lightly grease a 2‑quart casserole dish or 9×13‑inch pan with cooking spray or a little oil.

2. Mix the creamy filling

  1. In a large mixing bowl, combine shredded chicken or cooked ground beef, cream of chicken soup, Rotel (with juices), sour cream, milk, taco seasoning, and about 1½ cups of the shredded cheese.
  2. Stir until everything is evenly coated in a thick, creamy sauce. Taste and adjust seasoning with a bit more taco mix or salt if needed.

3. Layer the casserole

  1. Spread half of the crushed Doritos over the bottom of the prepared dish.
  2. Spoon half of the meat mixture over the chips and spread gently (dropping dollops works better than dragging so you don’t pull up the chips).
  3. Repeat with the remaining Doritos and then the remaining meat mixture.

4. Add cheese and bake

  1. Sprinkle the remaining 1/2 cup (or more) of shredded cheese evenly over the top.
  2. Bake uncovered for 30–35 minutes, until the casserole is bubbly and the cheese is melted and starting to brown around the edges.
  3. Let sit 5–10 minutes before scooping so it sets slightly.

Serving Ideas

  • Top with shredded lettuce, diced tomatoes, green onions, jalapeños, avocado, or a dollop of extra sour cream.
  • Serve with salsa or hot sauce on the side and a simple green salad to cut the richness.
