- Cut the chicken into evenly sized cubes so it cooks at the same rate as the rice.
- Taste and adjust salt and pepper after baking; the soups already add some salt.
- Stir in frozen peas, mixed vegetables, or a handful of shredded cheese near the end of baking for extra color and flavor.
Storage
Leftover Mamaw’s Chicken and Rice Casserole keeps well in an airtight container in the refrigerator for 3–4 days. Reheat covered in the oven or in the microwave with a splash of water or broth to keep the rice creamy instead of dry.
