For the Cookie Pie
- 1 cup unsalted butter, melted and slightly cooled
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 tablespoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
Optional Add-Ins
- 1/2 cup chopped walnuts or pecans
- 1/2 cup white chocolate chips
- 1/2 cup milk chocolate chips

Step-by-step instructions
Step 1: Preheat the oven and prepare the dish
- Preheat oven to 350°F (175°C).
- Generously grease a 9-inch pie dish with butter or nonstick spray and set aside.
- A well-greased dish helps the cookie pie release cleanly after baking and slicing.
Step 2: Mix the wet ingredients
- In a large mixing bowl, combine the melted, slightly cooled butter, brown sugar, and granulated sugar.
- Whisk until the mixture is smooth and glossy with no lumps of sugar.
- Add the eggs one at a time, whisking well after each addition, then stir in the vanilla extract.
- The mixture should look thick, smooth, and slightly creamy, similar to a classic cookie base.
Step 3: Combine the dry ingredients
- In a separate bowl, whisk together the flour, baking soda, and salt until evenly blended.
- This step distributes the leavening and salt so the cookie pie bakes evenly throughout.
Step 4: Make the cookie dough
- Gradually add the dry ingredients to the wet ingredients.
- Stir gently with a spatula or wooden spoon until just combined and no dry streaks of flour remain.
- Avoid overmixing, which can develop too much gluten and make the pie dense or tough.
- The dough will be thick and sticky, very similar to traditional chocolate chip cookie dough.
Step 5: Add the chocolate chips and mix-ins
- Fold the semi-sweet chocolate chips into the dough until evenly distributed.
- If using nuts or additional types of chocolate chips, fold them in at this stage.
- Aim for an even spread of chocolate so every slice has plenty of gooey pockets.
Step 6: Fill the pie dish
- Spoon the cookie dough into the prepared 9-inch pie dish.
- Use a spatula or the back of a spoon to spread the dough into an even layer, reaching all the way to the edges.
- Smooth the top gently; for extra presentation, sprinkle a few chocolate chips on top before baking.
Step 7: Bake the cookie pie
- Place the pie dish on the center rack of the preheated oven.
- Bake for 35–45 minutes, depending on your oven.
- The edges should be golden brown and set, while the center should look slightly soft and a bit underbaked for a gooey texture.
- If the top starts browning too quickly, loosely tent with foil during the last 10 minutes of baking.
Step 8: Cool and serve
- Remove the cookie pie from the oven and place it on a cooling rack.
- Allow it to cool for about 15–20 minutes before slicing so it can set slightly and hold its shape.
- The center will continue to set as it cools but should remain soft and gooey inside.
- Serve warm or slightly warm, ideally with scoops of vanilla ice cream, whipped cream, or a drizzle of chocolate or caramel sauce.
