1 (9.25‑ounce) bag nacho cheese Doritos, crushed (reserve 1½ cups for topping)
1 (10.5‑ounce) can cream of chicken soup, undiluted
1 (10.5‑ounce) can cream of mushroom soup, undiluted
1 (8‑ounce) container sour cream
1 (15.25‑ounce) can southwest corn, drained (or Mexicorn)
1 cup mild chunky salsa (or canned diced tomatoes with green chiles/Rotel)
3 cups shredded cooked chicken breast (rotisserie works great)
4 cups fiesta blend shredded cheese, divided (3 cups for filling, 1 cup for topping)
Optional substitutions and additions
Swap southwest corn for Mexicorn.
Use any flavor of Doritos (Cool Ranch, spicy nacho, etc.).
Replace fiesta blend cheese with cheddar or your favorite melting cheese.
Add black beans, extra veggies, or jalapeños for more bulk and heat.
Step-by-Step Instructions
Prep the pan and Doritos base
Preheat the oven to 350°F (175°C). Generously spray a 9×13‑inch casserole dish with nonstick cooking spray and set aside.
Crush the bag of Doritos (a rolling pin over the sealed bag works well). Pour all but 1½ cups of the crushed chips into the bottom of the prepared dish, spreading them into an even layer.
Mix the creamy chicken filling
In a medium mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and sour cream until smooth and fully combined.
In a large bowl, combine the drained southwest corn, salsa, shredded chicken, and 3 cups of the shredded cheese. Pour in the soup‑sour cream mixture and stir until everything is evenly coated and creamy.
Build the casserole
Spread the creamy chicken mixture evenly over the crushed Doritos layer in the baking dish, making sure it reaches all corners.
Sprinkle the reserved 1½ cups of crushed Doritos over the top of the chicken layer.
Finish by sprinkling the remaining 1 cup of shredded cheese evenly over the chips.
Bake
Bake the casserole in the preheated oven for about 25 minutes, or until the filling is hot and bubbly and the cheese on top is fully melted.
Let the casserole rest for 5–10 minutes before scooping and serving; this helps it set slightly and makes neater servings. Continue to the next page to reveal more tips and tricks
