How I Make Cheeseburger Quesadillas
I start by heating a large skillet over medium heat, adding the ground beef and diced onion. I cook, breaking up the meat, until the beef is browned and the onions are soft. I stir in the minced garlic, salt, and pepper, cooking for another minute until fragrant. For classic burger flavor, I sometimes add a squirt of ketchup and mustard, mixing to combine. I remove the mixture from the pan and drain any excess grease so the quesadillas stay crisp.
Next, I wipe out the skillet and return it to medium-low heat. I place a flour tortilla in the pan, sprinkling half with cheddar and mozzarella. I spoon the beef mixture evenly over the cheese, then top with a little more cheese for extra meltiness. I fold the tortilla in half and toast until golden and crispy, then flip and cook the second side.
Once all quesadillas are golden, I let them rest a minute before slicing into wedges. I love serving them with sliced pickles and dipping sauces for that full cheeseburger experience.
