For the best texture, start with popcorn that’s completely cool and only lightly salted; overly oily or heavily seasoned popcorn can keep the coating from sticking evenly. If you’d like more depth, add a pinch of salt or a splash of vanilla to the caramel after the marshmallows melt. You can also stir in mini chocolate chips, chopped nuts, or crushed cookies once the popcorn has cooled slightly but before it fully sets. Keep caramel marshmallow popcorn in an airtight container for up to 2–3 days; if it starts to clump or soften, spread it out again on a sheet and let it air-dry briefly before serving.
